Nestled in the heart of the vibrant Kreuzberg district, Albatross Bakery has established itself as a cornerstone of the local culinary scene. Located at Graefestraße 66/67, 10967 Berlin, this artisanal bakery serves as a gathering place for those who appreciate the intersection of traditional craftsmanship and modern baking techniques. From the moment you step through the doors, you are greeted by the comforting, unmistakable aroma of freshly milled flour and slow-fermented dough, signaling a commitment to quality that defines every product on the shelves.
The philosophy behind Albatross Bakery is rooted in the belief that bread is more than just a staple; it is a craft that requires patience, high-quality ingredients, and a deep respect for natural processes. By focusing on long fermentation times and sourcing regional grains, the bakery ensures that every loaf, pastry, and treat offers a depth of flavor that is increasingly rare in today’s fast-paced food industry. Whether you are a local resident looking for your daily sourdough or a visitor exploring the unique character of Berlin, the bakery offers a welcoming atmosphere that reflects the creative spirit of the neighborhood.
What Makes Albatross Bakery Unique
The reputation of Albatross Bakery is built upon a foundation of consistency and a relentless pursuit of excellence. Here are the core elements that distinguish this establishment:
Commitment to Sourdough Excellence: The bakery specializes in long-fermented sourdough breads, which are celebrated for their complex flavor profiles, airy textures, and superior digestibility. Each loaf undergoes a meticulous process that honors the natural biology of the fermentation cycle.
Artisanal Pastry Craftsmanship: Beyond bread, the bakery is known for its delicate selection of pastries. These items are prepared with high-quality fats and seasonal ingredients, resulting in layers that are crisp, buttery, and perfectly balanced in sweetness.
Focus on Regional Sourcing: By prioritizing partnerships with local farmers and millers, Albatross Bakery minimizes its environmental footprint while ensuring that the primary ingredients—the grains—are as fresh and nutrient-dense as possible.
Community-Centric Atmosphere: The space at Graefestraße is designed to foster connection. It serves as a hub where the community can engage with the bakers, learn about the origins of their food, and enjoy a moment of respite in a bustling urban environment.
The Art of Slow Baking
In an era where convenience often takes precedence over quality, Albatross Bakery stands as a testament to the value of the slow food movement. The bakers here understand that time is the most important ingredient. By allowing the dough to develop at its own pace, they unlock nutritional benefits and flavor nuances that simply cannot be replicated through industrial shortcuts. This dedication extends to every aspect of their production, from the precise temperature control of their ovens to the careful handling of delicate doughs.
The interior of the bakery reflects this minimalist yet warm approach. It is a space where the focus remains squarely on the products. Customers often find themselves mesmerized by the sight of golden-brown crusts and the rhythmic activity of the kitchen. It is this transparency that builds trust; when you buy a product at Albatross, you know exactly what went into it and the care that was taken to bring it to your table. The bakery does not just sell food; it provides an experience that connects the consumer to the ancient tradition of baking.
Furthermore, the menu is designed to be inclusive and versatile, catering to a wide range of palates while maintaining a cohesive identity. Whether you are seeking a hearty loaf to accompany a home-cooked meal or a light, flaky pastry to pair with your morning coffee, the variety offered is a reflection of the bakers' versatility and their desire to provide something special for every visitor. The staff is knowledgeable and passionate, always ready to share insights about the fermentation process or offer recommendations based on your personal preferences.
As Berlin continues to evolve, Albatross Bakery remains a steady presence, grounding itself in the timeless principles of quality and community. It is a destination that invites you to slow down, savor the moment, and appreciate the simple, profound joy of a well-made piece of bread. Whether you are a frequent visitor or a first-time guest, the bakery promises an authentic experience that celebrates the very best of what artisanal baking has to offer.

The coziest bakery. There’s a wide variety of pastries and sandwiches. Everything is so fresh and crunchy. The taste is amazing. The staff are so friendly. You can also order coffee (different options) and even buy their merch. Special thanks for the long bench outside (keep in mind that there isn’t really a place to eat inside). Highly recommended if you’re in this area.Food: 5Service: 5Atmosphere: 5

I go here regularly to buy the sourdough bread “Weiss”. It’s tasty and fresh, tasting especially good when toasted!
I also got myself a cappuccino and I must say it’s is definitely my number one. It’s light, fruity, sweetish and slightly bitter. It has a nice depth - I enjoyed it very much. I payed 3.50€, regular cow milk.
The Barista closes at 5.30pm (17.30Uhr)!
